The Secret To The Best Avocado Toast

Avocado toast is made at least 3 times a week in the Janes household. Here is my absolute favorite version..

Avocado toast gained social media stardom a few years ago. #Basic instagram girls all over the world were posting pictures of their simple avocados smashed on plain toast and everybody loved it. To be completely honest it took me a while to jump on the train and I just didn’t understand the hype. I mean, it was just toast.

On one of my trips home to Nashville, my husband and I stopped in Milk and Honey for Sunday brunch. Of course, avocado toast was on the menu. It said that the sourdough toast was topped with avocado, bacon and a poached egg. I thought what the heck, I am going to give it a try. And then began the addiction.

This simple little breakfast (lunch or dinner) can be made about 10,000 different ways. Different breads, different ways of adding avocado, meat no meat, egg no egg. Basically you can have some sort of piece of bread with some form of avocado on it and then run from there.

My husband and I typically stick to one simple, tried and true version every time and it never disappoints. Plain toasted bread, smashed avocado with a little lemon juice, bacon, a poached egg and Trader Joe’s Everything But The Bagel Seasoning. It can be whipped up in literally 10 minutes and it is such a filling breakfast. You get your carbs, protein and healthy fats all in one delicious package.

I start by putting a pot of water on the burner to bring it to a low boil. Then, I start cooking the bacon in a skillet. While the bacon is cooking, I pop the bread into the toaster. While the bread is toasting, I take two avocados and put them in a small bowl with the juice of half a lemon. I simply smash it together with a fork and set it aside. Place the toast on a plate and top with the smashed avocado then a piece or two of bacon. Once these steps are completed, I make my poached egg. I like for the yolks to be runny so it only takes about 2-3 minutes. Once the pot of water is at a low boil, I take a slotted spoon and start “swirling” the water to make a little whirlpool. Then just drop the cracked egg into the center of the whirlpool. Leave it in the water for 2-3 minutes and then remove with the slotted spoon directly onto the toast. Top with your Trader Joes’s seasoning (or just a little sea salt) and enjoy right away!

INGREDIENTS:

Serves two

DIRECTIONS:

  1. Bring a pot of water to a low boil.

  2. While the water is coming to a boil, cook bacon until cooked through and crisp. Set aside.

  3. Toast both pieces of bread until golden brown.

  4. Place both avocados in a small bowl with the lemon juice. Smash with a fork until it becomes a spreadable consistency. Divide evenly over both pieces of toast and then top with bacon pieces.

  5. Create a whirlpool in boiling water and crack egg directly into the center of the whirlpool. Leave in the water for 2-3 minutes. Remove with a slotted spoon and place on top of toast. Sprinkle with seasoning and enjoy right away!
