The Best BBQ Pulled Pork Sliders with Pineapple Slaw
This is your go to summer recipe, ridiculously easy and absolutely delicious.
I’m from the south. From Nashville to be exact. When I crave a little something from home it’s usually either fried chicken or mac and cheese. But there’s another southern recipe that occasionally I just have to have. BBQ pulled pork sandwiches. I instantly think of a family pool party when I think of any kind of barbecue.
With Fourth of July just around the corner, a good BBQ recipe is something you’re going to want. I love taking a very traditional recipe and giving it a little twist. Not so much of a twist that it takes away from the original, but enough to make people say, hmm what’s that? I kept the pork recipe very simple. I seasoned a pork shoulder with salt, pepper, garlic powder and a little bit of red pepper flakes. Here’s the best part, throw it in the crock pot with a little bit of beef broth and leave it for 8 hours. Can we just say, whoever invented the slow cooker is a truly incredible person.
Now for a little twist. I am going to be honest here, I did cheat and get pre-packaged coleslaw from the store. It is one of those things that you can certainly make from scratch, but the store bought version is always delicious and it’s so, so much easier. But, I added a little something to it. Some fresh pineapple. Pineapple and barbecue sauce is a match made in heaven. The smokiness from the sauce and the little bit of heat from the red pepper flakes pairs perfectly with sweet pineapple. Simply chop up the pineapple and throw it in with the coleslaw.
Once the pork has been cooking for 8 hours, take it out remove the bone and excess fat. The pork will already be falling apart at this point because it is so tender, but shred the pork and return it back to the crock pot. Next I put it in a healthy amount of honey barbecue sauce and mixed it all up. I served the pulled pork on my favorite Hawaiian King Rolls and then topped it off with the pineapple slaw. 3-4 lb pork shoulder
1 tsp salt
1 tsp pepper
1 tsp garlic powder
Store bought coleslaw
1 cup chopped pineapple
Kings Hawaiian Rolls
Place pork shoulder in a large crock pot and season with salt, pepper and garlic powder. Pour 1 cup of beef broth over the top of the pork to keep from drying out, add more if necessary.
Cook on low heat for 8 hours.
Once cooked, remove pork onto a plate or cutting board. Remove bone (if necessary) and excess fat. Shred remaining pork and return to the crock pot. Pour BBQ sauce over the pork and keep on the warming setting until ready to serve.
Prepare coleslaw and add in pineapple pieces.
Assemble pulled pork onto rolls and top with addition BBQ sauce (if desired) and coleslaw. Enjoy!
